La Bastide de Pierre’s tiramisu !

How can you resist a creamy tiramisu – probably one of the most famous desserts in Italy? At La Bastide de Pierres, which is found in the heart of the historic village of Gordes, the chefs have revealed the kitchen’s great secret – a lot of love and a dollop of patience. Combining sweetness with indulgence, this recipe will make any dinner unforgettable.

Not to be eaten in moderation!

 

For 8 people , you will need:

  • 6 eggs
  • 100g caster sugar
  • 500g mascarpone (not too fresh)
  • 300g Ladyfinger biscuits
  • 50cl unsweetened espresso coffee
  • Bitter cocoa powder

The recipe: 

  • Separate the egg whites from the yolk
  • Beat the yolks energetically into the sugar (using either a whisk or an electric mixer) until they are frothy. Add the mascarpone and mix again.
  • In another bowl, beat the egg whites until there are stiff peaks and then delicately add them to the mixture above with a spatula, blending together from top to bottom
  • In a square dish, spoon on a layer of the mascarpone cream you made, and cover it in biscuits (which have been quickly dipped in unsweetened cold coffee). The first layer is done!
  • Cover it again with cream and another layer of coffee-dipped biscuits and then finally with cream again. Leave it in the fridge for about three hours.
  • Powder the entire surface with bitter cocoa powder before serving.

Inspired by the area and filled with the essence of Provence, each cocktail is packed with imagination and passion, and is designed to put a smile on your face.

The world-famous Cosmopolitan is no exception! Juicy, tangy and refreshing, this legendary cocktail has it all. The Bartenders of La Bastide like to add a small (but incredible) twist: an infusion of fresh ginger.

To be consumed in moderation…

Ingredients :

  • 2oz (6cl) vodka
  • 0.5oz. (1.5cl) Cointreau
  • 0.5oz. (1.5cl) lemon juice
  • oz. (9cl) cranberry juice
  • 0.5 oz (1.5cl) ginger infusion

To make 50cl infusion of ginger :  cut 30g of fresh ginger in cubes. Bring it to a boil in 1 litre of water and reduce by half. Blend in a mixer and filter.

The recipe :

  • Combine all the ingredients in a shaker filled with ice. Shake away.
  • Strain and serve in a Martini glass and garnish with a slice of ginger.
  • And drink !

In Gordes : la Carbo, the real one !

In the heart of the village of Gordes is an authentic Italian trattoria. Close to the medieval castle and a few steps away from La Bastide, La Bastide de Pierres has been an institution since 1820. Here, la Dolce Vita can be savoured in a number of ways. Although in a menu that is filled with Italian specialities, Chef Andrea Pettirosso has one particularly renowned dish: a real spaghetti carbonara. (Yes, yes, it tastes just like it does in Italy!).
Let’s cook together!

 

For four people you will need :

  • 320g of spaghetti
  • 150g bacon lardons
  • 6 egg yolks
  • 50g grated Pecorino cheese
  • Salt & pepper
  • And that’s it !

 

The recipe :

  • Cook your spaghetti in boiling salted water for the amount of time recommended on the package.
  • Fry the bacon (careful not to burn it!).
  • Whisk the egg yolk and cheese together in a bowl (add 2 tablespoons of pasta water to the mixture), and keep some cheese on the side for later.
  • Drain the spaghetti and then pour it into the pan you’re frying the bacon in, adding the egg and cheese sauce. Heap the remaining grated Pecorino on top with some ground pepper. And you’re done
  • To make it look and taste even more delicious, add a few bacon chips (from cured meat ideally) which you will have already made crispy by popping them in the oven for 4 to 5 minutes at 180°C.

And it’s all ready. Buon appetito!

At Airelles Val d’Isère, we take great pleasure in sharing and in generosity. The proof of this is in our gastronomic and epicurean start to the day, when a mouth-watering buffet is laid out in the breakfast-room, which is itself filled with antique furniture and vintage wood. Whether you prefer your breakfast sweet or savoury, Airelles Val d’Isère has something for everyone.

Lunch is brought to us by one of the most respected female Chefs in France: Hélène Darroze. A true ambassador for her native south-west, she has brought the recipes from the region of her birth to her restaurants in Paris, London and now Val d’Isere. With the help of Loris Cornacchia, the executive Chef of Airelles Val d’Isère, she brings an array of delicious dishes to the table for lunch and dinner, while also bringing her acclaimed cookbook, JOÌA, to life.

On the menu are wild mushrooms cooked with black Périgord truffle, duck foie-gras terrine served with Savoy apple chutney, and green chard mixed with ham that’s been cooked on the bone and then gratinated with summer Beaufort. And that’s before we mention the generous dessert buffet that includes chocolate tart and grilled buckwheat, an Armagnac baba (a traditionally French pudding that resembles a brioche-like cake soaked in liquor), or even Paris-Brest cake with hazelnut praline and pomelo marmalade.

These are recipes handed down from our grandmothers. Take a step back into the authentic past of Val d’Isère in this relaxing setting.

Finally, right next to Airelles Val d’Isère, is La Grande Ourse, a classic that has remained untouched. It is Val d’Isère’s most iconic brasserie, beloved for decades for its unforgettable menu and its irresistible dishes. Le TIGrr arrives in Gordes

On 12th July, an Asian-inspired restaurant with an already legendary reputation in St Tropez and Megève took up residence at the heart of La Bastide in the Luberon region.

Le TIGrr Gordes, perched on the side of the village, offers breath-taking panoramic views over the Alpilles Valley from atop its large terrace. Accessible to guests via a charming small alley on the side of La Bastide, the feline’s lair is set to become an essential part of Gordes life.

Whether it be for a drink or dinner, Le TIGrr Gordes takes its guests on journey to a faraway world, blending exotic flavours with delicate dishes. A lounge bar with a festive atmosphere, the new arrival is a fantastic way to top off a day in the village.

The entrance bar serves a wonderful selection of the best wine vintages, champagne and signature house cocktails. It also caters for true epicureans with its deliciously refined cuisine, which features sushi, sashimi, maki rolls, dim sum, steamed rolls, egg rolls, spring rolls and the now famous Asian-coloured welcome cocktail. The perfect choice for anyone feeling peckish.

The lounge ambiance is made for celebrating, indulging and talking. As the night goes on, the atmosphere heats up thanks to live music from a different DJ every week, playing the smooth sounds of great funk, soul, disco and house classics. A festive atmosphere like no other, now open from 6pm to midnight.

Standing opposite the spectacular Luberon massif, the charming Saint-Firmin medieval château and church tower high over the small village of Gordes. A true gem of Provincial France and the inspiration for many an artist, the village is steeped in history and tradition and also attracts gastronomes, food connoisseurs and hedonists from the world over. This gastronomic tour will guide visitors around the rich variety of hearty, exquisite cuisine on offer at La Bastide de Gordes.

First stop is at the heart of La Bastide, where the taste buds are not the only ones being regaled, but the eyes too: here you savour the view while you admire the cooking.

L’Orangerie restaurant in La Bastide takes its patrons on a journey through the colours and flavours of Provence, with a gastropub ambiance that gives star billing to quintessential regional cuisine. A combination of audacity mixed with tradition provided by the fresh and seasonal local produce. Enjoy lunch on the terrace under the shade of the mulberry trees, or in the winter garden overlooking the dizzying Luberon landscape, strewn with century-old olive trees swaying in the wind: a masterpiece to behold.

Every Sunday, families and friends come together around the famous brunch, which has a cult following throughout the region. A succulent and sociable rendez-vous that you cannot miss, with the mouth-watering pastries of Elena Mosette, the Head Pâtissier, and an abundance of treats each one more scrumptious than the last.

Next is La Citadelle restaurant, which doesn’t just settle for the magnificent setting in which it lies. The streets of Gordes and its numerous art galleries are ideal for taking a stroll and losing yourself in your thoughts. When hunger strikes, La Bastide de Pierres is the place to go. This trattoria, open since 1820, transports you across the Alps and awakens the senses with divine Italian cuisine and an authentic, convivial atmosphere. Antipasti to die for, bruschetta and traditional pasta, pizzas, and more…the dolce vita right at the village centre.

To end our gastronomic voyage, we stop off at Le TIGrr restaurant. The legendary establishment from St Tropez and Megève is taking up residence at Gordes, much to the delight of fans of flavourful cuisine from distant shores. Run by Oth Sombath, crowned Best Thai Chef in France, this Asian-inspired restaurant offers a unique gustatory experience that will have diners purring with pleasure. A slight touch of exoticism and unfamiliar surroundings in the middle of Provence, which can be enjoyed with an aperitive on the terrace until late into the night with the live DJ.

Gordes is teeming with fine establishments that only help to enhance the enchantment and elegance of what promises to be an incredible stay. Bon appétit!
