Snow is falling in the Alps, and with the arrival of winter come thoughts of unforgettable ski holidays. 1. A new era with Chalets des Airelles

From December 10, Les Airelles, the iconic Courchevel Palace Hotel is getting bigger, offering its guests a new group of refined and luxurious hotel chalets. Made up of 19 rooms, the Chalets allow you to enjoy Courchevel in total privacy. Just a few steps from the hotel, the three chalets are dedicated to offering guests a sublime stay with attentive and bespoke service.

2. LOULOU launches at Val d’Isère

After gracing sunny Saint-Tropez beaches and Parisian terraces, LOULOU has come to Airelles Val d’Isère this winter. With a chic and friendly atmosphere, this new restaurant subtly blends Italian flavours with Alpine tradition. Chef Benoit Dargère has created a sun-drenched, Mediterranean-style menu with winter touches for the restaurant. LOULOU will welcome guests in the dining room or on the new 800m2 terrace from December 8.

3. La Cave des Grands Crus at Courchevel

Created exclusively for Airelles guests, la Cave des Grands Crus just a couple of steps from the Palace hotel, is the new gastronomic place to go this winter. You’ll taste the very best wines in a warm, intimate atmosphere. The private chef and master sommelier will skilfully match wine and food for you – a unique culinary experience.

4. La Grand Ourse – an unmissable restaurant in Val d’Isère

Next door to Airelles Val d’Isère, (re)discover the piste-side restaurant La Grande Ourse. Since 1936, it’s been renowned for its traditional cuisine of typical Savoyard dishes including fondue, raclette the famous local dessert Bolet de Solaise. Open from December 8.

5. Experiences for young and old

Because a winter at Airelles is always full of adventure, the hotels have come up with a wide range of activities and experiences. Looking for something high-adrenaline? Dive into a frozen lake at Tignes 2100  to explore the underwater Alpine world, or head off with a guide into the snowy Tarentaise peaks on a ski touring trip. Want to explore? Our concierges will design the perfect trip for you to dash about the mountains on a skidoo or husky-dog sled. And for the little ones? They can spend a day with our bakers or ice-hockey players.

6. Piero, a trans-Alpine menu in Courchevel

After setting up Carrara in Saint-Tropez, Chef Marco Garfagnini has brought his culinary expertise to Courchevel with a new Italian menu at  Piero in the Alps. Born in the Tuscan village of Carrare, his signature dishes, inspired by his roots, are both traditional and unforgettable.

7. Vanille & Lilas Boutique, the new Airelles concept store

After a summer at Gordes, the Vanille & Lilas Boutique has set up at the heart of Les Airelles in Courchevel. Its new location allows guests to prolong their Airelles experience thanks to a selection of items from the Airelles hotels and limited-edition items from a range of high-end brands.

There’ll be a party atmosphere in Saint-Tropez during the 23rd ‘Voiles de Saint-Tropez’ festival. For two weeks, the iconic village steps back in time to welcome 250 of the best sailors from around the world. It’s a unique event originally borne of two sailors challenging each other.

The story began in 1981 when Dick Jayson and his Swan 44 arrived at Saint Tropez’s port – a fashionable place welcoming celebrities from all over the world – and Jean Laurain challenged him to a race. The next day, they left from the foot of the Portalet Tower at Saint-Tropez.

From this, the Niourlague Race was born and ran for many years until, in 1999, it became the ‘Voiles de Saint-Tropez’ under the auspices of the Saint-Tropez Nautical Society.

Today it is considered a highlight of the sailing world and every year, this iconic meeting attracts some of the most beautiful boats in the world, with traditional boats and the most avant-garde sailors coming together for this (almost) fortnight-long event.

Well, almost. At Zetta, the new must-try restaurant of the summer, head chef Marco Garfagnini has created a sunshine-filled menu of pizzettas and salads, imbued with the flavours of the Mediterranean. In the heart of Saint-Tropez, Zetta exemplifies everything life by the sea has to offer. In this laid-back restaurant, the decor is chic yet relaxed, and the atmosphere is made for sharing both plates of food and great conversations.

When lunch is over, it’s time to unwind. Some will feel the allure of the blue water and head to the legendary Pampelonne beach. Designed to feel like a garden on the beach, Jardin Tropezina invites you to lie back and enjoy the exceptional setting and the sea breeze. This little slice of paradise is also only a few hundred meters from the Domaine de la Messardière. Those in need of pampering can also head off to the Valmont Spa. There, each guest can indulge in a sensory journey dedicated to care, well-being and beauty. Traditional massages are available in the tranquillity of the chateau, allowing guests to forget the stresses of everyday life and enjoy the peace of the moment.

Perched on the southern slopes of the Alpilles mountain range in the heart of Provence, sits the Château d’Estoublon. It is imbued with the heritage, and even some physical markers, of the Roman empire, which is the pride of the region. Halfway between Arles and Avignon, the Estoublon estate and its 18th century Chateau are nestled in this magnificent landscape, one that has inspired numerous painters and writers over the years. It is this rugged scenery that has been the backdrop to many of Vincent van Gogh’s most famous paintings. And in the midst of all this history is Château d’Estoublon, which has been a working estate since 1731, making olive oils and exceptional wines.

A unique craftsmanship

Found between Provence’s Maussane and Fontvieille, and renowned for its outstanding wines and for its collection of olive oils, the Château d’Estoublon provides a masterclass in the Provencal art of living. Emblematic of the South of France, these two local products are made entirely organically. Grapes and olives are grown, cultivated and bottled on the estate, using a manual and mechanical manufacturing processes, without any chemical intervention. From the moment the fruit is picked, until the day the products go on sale, each step is overseen by the Estoublon team. Our technical prowess and reputation were solidified at the New York International Olive Oil Competition, where we won first prize.

“Rosé all day” – an experience guests from Gordes and Saint-Tropez will treasure

From this summer onwards, Airelles is offering an unforgettable experience at the Château d’Estoublon. Guests staying at La Bastide in Gordes or at the Château de la Messardiere in St Tropez will be offered privileged and exclusive access to the Chateau. Here, they can revel in the warmth of Provencal life and delight at the pleasures of the region, either alone, with a partner or the entire family, in the heart of a 200-hectare estate.

Designed as an exclusive country club, the Château d’Estoublon is now opening its doors to guests all day. Between visiting the estate, tasting the wines and olive oils, accessing the Château’s services and activities, and enjoying a lunch at the estate’s new restaurant – La Table d’Estoublon by Wim Van Gorp – there is much pleasure to be had. The “Rosé all day” experience offers visitors the chance to savour a wonderfully French summer’s day out, wandering amid the vines and sitting under the shade of the olive trees.

La Table d'Estoublon  – a voyage through time and taste

In 2020, the estate’s restaurant will be unveiled after a major refurbishment, done to reflect all the glories of French cuisine. Located in the property’s former winery, the new restaurant brings together taste, talent and beauty, with an interior design that is as refined as the cuisine created by head-chef, Wim Van Gorp.

The vaulted room is lit up by pale stonework, and decorated with antique carpets and furniture, which now sit next to bold design touches – grand materials rubbing shoulders with olive trees in pots, creating an irresistible blend of influences, much like the cuisine itself.

On the menu are fresh, local and seasonal products, with Provence’s most renowned ingredients taking centre stage. Everything is sourced from the best producers: lamb from the Alpilles, pork from Ventoux, fish from the Mediterranean, rice from the Camargue region, citrus fruits from Menton, vegetables from the garden – and, of course, olives from the estate. The classics of Provence are shaken-up with a few exotic additions. These include vegetable ceviche in a lemon-ginger marinade; lamb samosas with a cumin and coriander yogurt sauce, and farm-roasted chicken with chickpea chips, topped with green olives and saffron. All delicious dishes, made even more delightful when accompanied by a glass of the estate’s famous red, white or rosé wine.

Chic and glamorous – or rather rustic and relaxed – the Château d’Estoublon is yours to mould, making it a dream setting for most important moments in your life: weddings, birthdays, christenings and family celebrations. Going to Airelles Val d’Isère, it also means to choose one of the most beautiful sky area of the world. It has to be stated that being linked to the Tignes resort within the espace Killy, the Val d’Isère has numerous arguments.

“First, it is a true four seasons resort, which is open from autumn to spring and furthermore we can enjoy summer on the Tignes glaciers” as said by Thomas Boulet, Bernard Orcel Technical Director, who is particularly fond of this area and is delighted with the opening of a Bernard Orcel ski room in Airelles Val d’Isère. Second asset of charm, and not the least: “Due to its location in the mountains massif, Val d’Isère benefits from a superb snowfall with lovely flurries of snow and sometimes those do not happen elsewhere.” So, a sure value.

Concerning ski, the resort has the reputation of its ski runs, which are favourable to a more sportive practice that will seduce the advanced skiers who are looking for strong and diversified thrills. More than 300 km of ski runs, doomed or less doomed, and among them the true myths as the Face de Bellevarde, 90 ski lifts or also two snow parks. The non-enthusiasts of ski runs will enjoy beautiful waypoints in woods or large virgin spaces facing the mountain (always equipped with Arva and with an ABS back bag, which are available in the ski room).

The beginners will not be forgotten: in the resort, they can enjoy the tops of the mountains, “in contrast with numerous areas in the resort bottom where the green and blue ski runs are, here the altitude plateaux ski spaces are totally accessible. To avoid the most difficult ski runs, there is the option of climbing and returning to the resort using the chair lifts,” states Thomas Boulet.

Legendary evenings

Between dreamy meals and effervescent parties with constantly reinvented themes, Les Airelles invites its guests, once again this year, to experience the most unforgettable moments together.

At La Table des Airelles, on December 24th the spirit of Christmas will be celebrated around a gala dinner, a tradition of the Cranberries. And a few days later, to honour the New Year, characters and musicians will stroll around on December 31st in a fiery atmosphere where all codes are pushed back.

On 14 January, on the occasion of Russian Christmas Airelles brings to life the much adored Christmas ballet: The Nutcracker. With a nod towards the ballet’s heritage, a special dinner will be served accompanied by Russian decorations, entertainment and music.

For Mardi Gras, destination New Orleans and its famous colourful Carnival. Starting with fancy dress workshops over afternoon tea, the festivities will roll into the evening with a traditional dinner and Louisiana jazz.

Finally, on 8 March, Women will be in the spotlight. During a gourmet and bewitching evening, a magician will transport the spirit of the guests to a mysterious atmosphere, around a dinner where magic will operate.

Le Grand Contrôle Versailles : a hôtel particulier by Jules Hardouin-Mansart

This hôtel particulier was constructed in 1681 in the heyday of the Sun King and was initially intended for the Duke of Beauvilliers, Colbert’s son-in-law. It was designed by Louis XIV’s favourite architect, Jules Hardouin-Mansart, a 17th century benchmark in French classicism who made his mark as the creator of the Dôme des Invalides. In the 18th century, some modifications were carried out on Le Grand Contrôle hotel, which was joined to the Château de Versailles by Louis XV. Spanning three buildings, Le Grand Contrôle, Le Petit Contrôle, and the Pavillon des premières cent marches encircle a courtyard holding similarities to the iconic parterre of the nearby Orangerie.

History and power : 1788, France shines out across the world

Le Grand Contrôle became what we would now refer to as the ministry of finance, and being a fly on one of its walls would have meant observing some of the most powerful figures coming to meet Louis XVI’s ministers, such as Turgot or Necker. It was here, in the privacy of these stone walls that the building blocks of American independence were laid out thanks to the financial support of the King of France. The European cultural elite would regroup here amidst the elegant decor of Le Grand Contrôle, Necker’s wife holding court with the great names of the Age of Enlightenment. Their daughter, Madame de Staël, quickly took over. She was a brilliant intellectual and feminist who was considered one of the most intelligent women of her time. In 1788, Le Grand Contrôle held significant political, economic and cultural influence. More than two centuries later, it will finally regain its splendour within the estate of the Château de Versailles.
